Tired of ending up with a big pool of unused dressing in the bottom of our salad bowl, we finally decided to start measuring.  Here’s what we came up with.

1 T. olive oil
1 T. vinegar (we like 1/2 balsamic, 1/2 apple cider)
pinch salt
pinch sugar
plenty of pepper
tiny drop of dijon mustard to help emulsify it (1/8 t.)

Whisk everything vigorously and adjust seasonings to taste.
